Soba Sauce

You can purchase commercial “soba dipping sauce” in Asian markets, but it is high in sodium. Make a batch at home and keep it on hand to serve with cold soba noodles for a refreshing lunch or dinner side dish.

Ingredients

SERVINGS: 1.5 Cup(s)
  • A 1 ½-inch long piece ginger, peeled and chopped or grated
  • 3 cloves garlic, chopped
  • ½ cup tamarind concentrate (sold at Asian markets)
  • ½ cup soy sauce
  • ½ cup water

Instructions

Combine all ingredients in saucepan and cook over medium heat until the sauce reduces to 4 ounces total. Strain and store refrigerated.
